Some people are able to use a sharpening steel, handheld, which is inexpensive and space-efficient. I got what seems to be a reasonable sharpener at Costco for like $50, something like &lt;a href="http://www.amazon.com/Chefs-Choice-300W-Diamond-Sharpener/dp/B00005QEZS/?tag=reasogoods0b-20" rel="nofollow"&gt;one of these&lt;/a&gt;.

It does a good job, and it's easier than taking it to the butcher's counter to get them sharpened.</description>
